We take pure Indiana honey and add a blend of pureed peppers, including Trinidad Scorpion peppers, Thai chilis, pequins, and more. The peppers get a 24 hour, salt-buffered fermentation before being stirred with more salt to stop fermentation, then added to the honey.
Then we smoke a batch of "clean" honey and add it to the hot honey, give it a stir, strain the seeds, skins and garlic out, and wrangle this thick liquid summer sunshine into 5-oz bottles.
